CARROT HASBROWNS 3 potatoes, peeled and grated 3 carrots, peeled and grated 1 onion, peeled and grated 1 tablespoon oil salt and pepper to taste Directions: Combine potatoes, carrots and onion in medium bowl and mix well. Salt and pepper to taste. Heat oil in skillet. Dump in potato mixture and form into a large pancake. Cook until browned on one side, and then flip over and repeat. Serve cut into wedges, or just break it up. Can be served plain, or with applesauce, or sour cream. Yummy, and pretty too! ALOO GOBI 3 tablespoons vegetable oil 1/4 teaspoon cumin seeds 1 pinch ground turmeric 1 hot green pepper, split down its length (optional) 3 roma (plum) tomatoes, chopped 2 tablespoons minced fresh ginger root 1 potato, cubed 1 head cauliflower, broken into small florets 1/2 teaspoon white sugar salt to taste DIRECTIONS: Heat oil over a medium-high heat. Toss in the mustard seeds; when they start spluttering, add the asafoetida, followed by the cumin seeds, turmeric powder and the green pepper. Add the chopped tomatoes and ginger; stir and saute for a few minutes. Add the potato, cauliflower florets, sugar and salt; stir well and cook until the potatoes are cooked and the cauliflower tender yet crunchy. (For a crunchier cauliflower, add it when the potatoes are just getting done but not quite finished cooking). SOMOSAS INGREDIENTS: 1 tablespoon vegetable oil 1/2 cup chopped onion 3 (19 ounce) cans garbanzo (chick peas) beans, drained 2 tablespoons curry paste 1/2 cup apple juice 3 sheets frozen puff pastry, thawed 1/4 cup all-purpose flour for dusting DIRECTIONS: Preheat oven to 350 degrees F (175 degrees C). Heat oil in a large skillet over medium-high heat. Saute onion until browned, about 5 minutes. Reduce heat and add garbanzo beans. Mix curry paste with apple juice until smooth, then add to skillet. Simmer mixture 10 minutes, stirring occasionally and adding more apple juice or water as needed to keep mixture moist. Cut each sheet of pastry into 3 equal-size rectangles, then cut each rectangle in half. (You will have 18 pieces total.) Dust a clean, flat surface lightly with flour, and roll each piece of pastry until it is double in size. Dust pastry with flour as needed, to prevent it from sticking to rolling pin. Spoon an equal amount of filling into center of each pastry square. Fold in half and press edges to seal. Place on nonstick baking sheets. Bake in preheated oven for 25 minutes, until golden brown.
